There's something new and potentially convenient entering my life this week: Supper Swap. This is a group of five women who cook for 30 people once a week in return for dinner being delivered the four other weeknights. They've been doing it successfully for almost a year, but one family recently dropped out and I'm giving it a trial run. After dinner luxuriously arrived at the door yesterday morning ready for me to quickly put together last night, I figure it could either be the most convenient thing I've ever done, or just plain stressful. Hopefully it'll work and the rest of the women won't kick me right back out of the group once they realize I'm not a food genius.
SO, my biggest task today is coming up with 15 main dish recipes to bring to our 3-month menu-ing meeting. Somewhat tricky since (a) I'm not good at thinking about cooking and (b) I have no frame of reference on how the group eats. I've got a few things on the list so far, but I need ideas!! Any ideas. C'mon you moms, I know you've got a go-to suggestion for me. (Please?)

My enchiladas are pretty easy and can be made in large amounts. I also have a casserole that's good and easy. For winter time we love to make taco soup and except for having to brown meat it is all done in the crock pot. Let me know what you might want.
this plan sounds great-- except for the part where you have to cook for 30 people! i want to join a dinner group where people just bring me dinner four nights every week!
i have some great chimichangas that are on my vegetarian blog. they make a TON too, so it would be a good one to do.
Tracy, my sister did a dinner group like this and it lasted something like 6 years! She said it was amazing and she loved it. I am jealous.
You probably already have this crockpot pork recipe:
1 pork loin (1-2 lbs)
1 cup brown sugar
1 big jar salsa (I like Pace Mild)
Cook for 4-6 hours and shred. Great as a taco/burrito filling, in a quesadilla, on a salad. I also have a recipe for dressing to put on it that is amazing, if you want it, email me and I'll be happy to send it to you.
How about chicken pot pie? Get pre-made pie crusts, line an 8x11 pan with them (you will have to cut them to fit right and pinch together to seal), fill with chopped cooked chicken, cooked veggies, and roux (or a sauce made from cream soup, sour cream, milk and maybe some spices), top with another refrigerated pie crust and bake. (one for each family)

Other complete meal ideas (thinking about what I've made recently):
-tri-tip, potato salad and corn on the cob
-baked pasta, cucumber salad and grapes
-tacos & fruit salad
-homemade sub sandwich, salad and hearty soup
-ribs (super easy to make in the oven), yummy bread, green salad and strawberries

I hate you! I hope they do kick you out because now I have to cook every night. JUST KIDDING!! You will love it and you will soon be bringing me an extra dinner once in a while to repay me for bailing.
I am not sure I get the concept of what you guys are trying to do. I know you are swapping dinners but do you have to make a ton of food to share or what? I am totally trying that pork loin recipe Sally gave though.
